This past weekend in ran to Costco to pickup a box of my beloved protein bars and re-stock the stash. I wandered the isles not seeing them and started having a mild panic attack. Where did they go? Did they stop carrying them…nooo! Just then, I spotted a pallet full of Kirkland Signature protein bars in a shiny new packaging design. Phew! But wait…did they change anything? Are they still low carb? Do they taste they same? Well, a quick look at the box and nutrition facts and all looks well.
If you are anything like me, breakfast is usually on the run. My morning usually looks a bit like this: hit snooze on the alarm clock a few times, get up, shower, get dressed, run out the door…run back in the door because I forgot breakfast, off to work!
On mornings like these, protein shakes have become an easy and convenient breakfast when I just don’t have time for anything else. I recently decided to try adding protein powder to coconut milk and the results are amazing! The thick, delicious shake hits the spot as I commute to work. There are many options out there, but I’m very happy with the organic (unsweetened) coconut milk by So Delicious. By itself, the coconut milk doesn’t have any flavor that will interfere with your favorite protein powder. It’s cold and creamy with no odd aftertaste unlike other options like almond milk (blech!).

The keto community over there is a great source of information, motivation, recipes, and success stories. The other day, a post jumped out at me about Costco’s latest keto friendly product: Kirkland Signature Protein Bars. The comments seemed positive and I knew that I had to try them. On our next weekly Costco run, I had a mission…to pick up a box of these and see if they live up to the hype.
